The Osteria

L’Osteria was founded in the early 2000s and in 2008 was taken over by Igor Liberti. From the very beginning, the Osteria was oriented toward the world of beer, with a constant focus on researching and developing its craft beer selection.

The Beginning

At the beginning of 2023, Igor attended a course to become a Beer Sommelier, where he met Eros (the future brewmaster). A strong friendship quickly developed, built on shared drinks, exchanges of ideas, and great mutual respect. The time was right, and one spring evening, in front of a fantastic Belgian lambic, with just three words and a knowing glance, the idea was born that would later become the Fabbrica’s beer production project…

The First (and for Now the Only) Brewpub in Ticino

At last, here we are. In 2025, we finally managed to become “Fabbrica” again in every sense — in name and in fact. Since January, we have been producing small batches of craft beer, poured directly on site.Fresh, aromatic, full of passion and enthusiasm. Our motto is: “Let’s have serious fun!”Yes — because we take what we do seriously.

The Production Process

We select premium-quality malts of German origin and hops sourced from all over the world, striving to preserve their original aromatic characteristics. We then use specific yeasts tailored to each beer style, and the water from Losone is also organoleptically very interesting for brewing.Production takes place entirely by artisanal methods — from milling the malt with a grain mill, to mashing, boiling, and subsequent fermentation at controlled temperatures.Manual work is an essential and valuable part of the process, and we like to think that we transmit our passion and emotional strength into the final product.

Brewmaster Eros Ciccone

Eros Ciccone is the brewer of Fabbrica. He fell in love with this precious beverage in 2015 after a journey in the world of winemaking. At the time, he owned a vineyard and for fifteen years produced small quantities of wine.He then began to take an interest in tastings, first becoming a Swiss Beer Sommelier and later specializing further to become an international BJCP judge. Eros has thus taken part in several beer competitions.His interest later focused on “home” beer production, and in 2019, together with other friends and enthusiasts, he founded the first homebrewers’ association in Ticino: AHBT.Thanks to the association, exchanges with professional brewers, fellow homebrewers, and his passion for research, Eros has achieved remarkable results in beer production… seeing (and tasting) is believing!
